Recipe

Ingredients:

500g pork ribs

Seasoning:

80g vegetable oil,10g salt,50g sugar,20g vinegar,10g prickly ash,10g cooking wine,10g shredded ginger,10g shredded shallot,200ml fresh soup or water.

Directions:

Cut the pork ribs into squares about 8 cm long.Quick-boil the meat in the boiled water for 2-3 minutes and then take out.

Sprinkle the salt,Chinese prickly ash,cooking wine,shredded ginger and scallions over the ribs.Steam them in the wok for 30-50 minutes.

Heat 60g oil in a wok to a boil and then put in the rib squares.Stir fry to a golden color and take out for use.

Heat 20g oil in the wok and add sugar,vinegar,fresh-made soup or water.Then put in the rib squares and stir fry thoroughly.Turn to a low fire to boil off some of the soup.When the soup disappears,take out and serve.
