As explained on page 30, iron-plate sizzled dishes are not really authentic Chinese cooking, but they usually create a dramatic appearance at the table in a restaurant.

There are no specific recipes for sizzled dishes – almost any quick stir- fried dishes can be served on a sizzling iron-plate – only remember to reduce the last stage of cooking time by about 30–40 seconds, so that the food will not be over cooked for serving.

Here are just a few recipes specially adapted for iron-plate sizzling. The points to remember, apart from slightly undercooking the food as mentioned above, are that the iron-plate must be preheated to very hot before serving, and that you must keep a distance away from the plate as food is poured onto it, for the hot steam will splutter small beads of oil and gravy all over the place.

Provided that the food is prepared and cooked correctly in the kitchen, you could expect to attain a 98%–100% success rate for any of these dishes.
