garlicky broccoli eggs

These eggs are perfect when all you want is a light bite, just a little something to tide you over that is both filling and tasty. Give your taste buds an extra treat by cooking up some garlic and onion oil to fry the eggs in.

Serves 1150g broccoli, cut into florets 2 eggs 1 tsp vegetable oil pinches salt 2 pinches ground white pepper for the garlic and onion oil 1%2 tbsp vegetable oil red onion, finely diced 2 cloves garlic, finely diced 1 Steam or boil the broccoli until it is tender. Drain, then chop roughly until the broccoli is very small. 2 Vigorously beat together the eggs, oil salt and pepper until the eggs are frothy and well combined.

Set aside. 3 For the garlic and onion oil, heat the oil in a non-stick frying pan over a medium-low heat and fry the onion until soft. Reduce the heat to low, then add the garlic and fry for a 2-3 minutes until the oil is highly fragrant.

4 Turn the heat up to high and add the chopped broccoli, then pour in the beaten egg. The egg should bubble up and cook rapidly. Scramble it, then plate up as soon as the eggs are partially set because they will continue to cook.
