EGG FRIED RICE

Serves 4.

Preparation & cooking time: about 5–10 mins.

The rice should be cold before frying.

3 eggs 1 teaspoon salt

2–3 tablespoons oil

450g (1lb) boiled rice

50g (2oz) peas pinch of MSG (optional)

Lightly beat the eggs with a pinch of the salt.

Heat the oil in a preheated wok, lightly scramble the eggs. Add the rice and stir to make sure that each grain of rice is separated, then add the remaining salt, peas and MSG (if using), blend well and serve.
