BOILED RICE

Serves 4.

Preparation & cooking time: about 20–25 mins.

Use long grain or patna rice; or better still, try Fragrant Rice from Thailand.

225g (8oz) rice

200ml (⅓ pint) cold water

pinch of salt

½ teaspoon oil

Wash and rinse the rice just once. Place the rice in a saucepan and add the water so that there is no more than 2cm (⅔”) of water above the surface of the rice.

Bring to the boil, add salt and oil, then stir to prevent it sticking to the bottom of the pan. Reduce the heat to very, very low and cook for 15–20 minutes under cover.

Remove from the heat and let stand for 10 minutes before fluffing up the rice with a fork or spoon before serving.
