SESAME AND PEANUT SAUCE

Think of this as the chinese equivalent of peanut butter.It is used across the whole of China in various capacities,for instance on top of chicken salads or spread on breads and buns by street vendors

Makes about 200g

INGREDIENTS

1 teaspoon sesame paste

5 tablespoons smooth peanut butter

2 teaspoons rice vinegar

2 tablespoons light soy sauce

1 tablespoon sugar

5 tablespoons water

salt and white pepper

1.Place all the ingredients in a blender and blend until smooth

2.Store in a sterilized airtight container in the refrigerator for up to a week

CHEF’S TIP

If the mixture is too thick,add a little more water to loosen.But don’t worry too much about the thickness of this sauce,as you will need to add additional water when you reheat it for use in any case
