PEANUTS IN SWEETENED BLACK VINEGAR

I first had this dish while roaming the streets late at night in the coastal city of Qingdao in Shandong Province in eastern China.Stopping off for one last drink before heading home,I was given these peanuts coated in a rich,syrupy and slightly vinegary goodness.This makes a nice alternative to the usual salt,sugar and MSG versions that are readily available in Chinese restaurants.

Serves 4

INGREDIENTS

200ml sweetened black vinegar

200g roasted peanuts

salt and white pepper

1.Place the vinegar in a non-reactive pan and bring to the boil.

2.Add the peanuts and cook until the vinegar has reduced to a syrup.

3.Season with salt and pepper and serve.
