1 min readThe common tossed green salad is unknown in Chinese cuisine.A salad can be hot or cold, an appetizer or part of the main meal. It may even take the place of a sorbet when served between courses.
Hot Spiced Cucumbers
Rice vinegar and rice wine vinegar both mean the same thing. Rice vinegar is simply rice wine that has been allowed to ferment.

Ingredients
2 English cucumber
12teaspoon salt
1teaspoon grated ginger
1garlic clove, finely minced
1tablespoon plus 1 teaspoon red rice vinegar
1tablespoon sugar
4teaspoon chili paste
1. Peel the cucumber and cut into thin slices. Place in a bowl and toss with the salt and leave for 15 minutes.
2. Combine the remaining ingredients in a bowl. Place the cucumber in a clean bowl and pour the sauce mixture over. Serve immediately or chill.
