It is speculated that the earliest and most primitive method of cooking by our ancestors was a form of barbecuing – they simply baked the carcasses of animals on hot stones and ashes. Seasonings and other refinements, such as cutting the meat up into smaller pieces and cooking them on skewers, must have come much later. I mention this because I assume that the dietary habits of our ancestors probably did not differ greatly across the surface of the earth until the invention of different cooking utensils – and thereby different cooking methods and techniques.

Most home kitchens in China are only equipped with a stove, so the Chinese have to visit restaurants or take-aways to sample roasted and barbecued food; in fact, most take-aways in China sell only roasts and barbecues.

Since every home kitchen in the West has an oven, you should achieve high marks for these dishes: I would say a rating of 95%–100% is not at all impossible!
