Dandan Mian

Dandan Mian,a kind of hot-spiced noodles or spicy peanut noodles,is a famous Chengdu snack.It is flavored with a sauce containing dried shrimp,shredded preserved vegetables,crushed roasted peanuts,sesame seeds,chilli oil,soy sauce vinegar and garlic.The dish is widely spread in Sichuan region,which is often served as banquet snack.

Sichuan Pancake

Sichuan pancake is characterized by its diverse kinds and unique flavors.Sliced chicken,beef,steamed meat,and entrails of oxen are often used as its fillings.

Cold noodle with shredded chicken

As a traditional Sichuan snack,it has a long history and great influence on the whole province.It has spread to all parts of the country in recent years,particularly the vast northern areas.Its cooking method:put machine-made noodle into boiled water.The noodle shall not be boiled too soft.Vegetable oil should be added into the noodle while it is still hot,then shake the noodle so as to lower its temperature.When the noodle do not stick to each other,the dish-cold noodle is finished.

Pearl Ball

The Pearl Ball of the North China tend to be made by meat which are with salty flavor,while the Sichuan Pearl Ball is featured by its sweetness and fragrance,with fillings such as sesame and white sugar inside.Glutinous rice is wrapped outside,which appeals to us by its crystal outlook.The Pearl Ball could be taken to ease the hot flavor of other Sichuan dishes.
