CHILLI GARLIC SAUCE

Follow your palate!If you like garlic,add loads when making this sauce,but if you don’t,add less.The same goes for the amount of chilli that you use

Makes about 275g

INGREDIENTS

1 tablespoon vegetable oil

5 tablespoons very finely chopped garlic

5 tablespoons chilli oil

50ml light soy sauce

2 tablespoons dark soy sauce

5 teaspoons Chinese red vinegar

1 teaspoon sesame oil

2 tablespoons chopped spring onion

1 tablespoon chopped red chilli

1.Heat the oil in a non-reactive pan and lightly saute the garlic over a low heat until fragrant Add all the remaining ingredients except the spring onion and chilli and bring to a gentle SImmer

3.Remove from the heat and add the spring onion and chilli before serving

CHEF’S TIP

Don’t add the spring onion and chilli too early or they will go soft and lose their vibrant colour
